Blackberry and mint ice cream

1 x basic ice bream base, 600 g blackberries, chopped mint, 400 ml milk, 375 ml cream, 100 g glucose, 9 egg yolks, 175 g caster sugar.


1. Combine the milk, cream and glucose in a pot and put it on a moderate heat. 2. In a separate mixing bowl, cream the yolks and the caster sugar. 3. As soon as the milk – mixture starts to boil, remove it from the heat. 4. Add half of the warm milk mixture to the creamed eggs while whisking continuously slowly. 5. Add this mixture to the rest of the hot milk. 6. Return this to the heat and stir continuously over a low heat until the mixture starts to thicken. 7. Do not allow the mixture to boil – this will cause the egg to overcook and the mixture to curdle. 8. Let mixture cool down and the follow desired recipe for ice creams.
